Tajine cooking

Tajine cooking
has become my favourite occupation after coming home from work.


The ingredients for a veggie tajine are unspectacular:
onions, carrots, tomatoes, fennel, garlick, celery, olive oil,
parsley and coriander.
Ras el Hanout, a North-African blend of spices, adds an oriental touch.


Everything is cut to small pieces, the onions are slightly roasted, the other veggies, salt, pepper, ras el hanout and some water are added and then the cap is put on the pot.
The whole thing simmers for half an hour, and finally the fresh parsley and coriander are added.
Voilà, dinner is ready!


And, perhaps a glass of prosecco makes the cooking process still more delightful :)

Hi Maria!
I don't have Tajine and haven't done Tajine cooking.
but I see Tajine in many stores here.
is it one of pans to steam something?

Aya, yes, there is not much water added and the meat and vegetables are steamed. The material seems to be clay with a hard coating. You can use it on the electric kitchen stove.
I tried it once and I was soenthusiastic about it because the recipes were very easy and very delicious. I love heaps of vegetables with some meat or fish and oriental spices and herbs like coriander! So Tajine cooking seems to be a fashionable thing now - not only here in Europe but also in Japan? I think we live in a globalised world :)

Sounds like a healthy way to eat and a simple way to prepare. I had not heard of Tajine cooking before your post nor do I use coriander. I must try this sometime. Hope you have a wonderful weekend too. Peace
