Recipe for the Turkish zucchini soufflé (Firinda Kabak)

Here the recipe for the Firinda Kabak!

Ingredients:
1200 g zucchinis, grated
3 eggs
1 onion middle sized, sliced
130 g shaved Parmiggiano (Gruyère)
100 g feta (sheep and/or goat cheese)
5 spoonful of dill
5 spoonful of peppermint leaves
5 spoonful of parsley
all herbs finely chopped (table spoons)
1 teaspoon of chili powder (at will)
1 teaspoon of cumin
a douzen dark olives, pitted and sliced (at will)
salt, pepper, olive oil
about 5 heaped table spoons of breadcrumbs (or flour)

Preheat the oven 180°C

Slice the onions, grate the zucchinis, and SIMPLY mix all ingredients together and put them into a casserole.
Add more flour or breadcrumbs when too soggy. The mass should not be liquid :)
Sprinkle the surface generously with olive oil.
Forget it for 45 minutes at 180°.

Allow it to cool off for 5 or 10 minutes.
Voilà, bon appétit!
On peut manger le soufflé chaud ou froid.
C'est un repas très raffiné.

Is also a perfect side dish with grilled meat :)

Hi Maria yor recipe sounds lovely I will certianly be trying it out when my daughters zuccinhi grows

Thought you might like to see the Aussie recipe I use . Add spice to your own taste.


Ingredients:
4 eggs, 1-2 zucchini, grated, 1 onion, diced, 3 rashers (Slices) of bacon, diced, 1/2 cup of oil, 1 cup of grated tasty cheese, 1 cup of self raising flour

Method:
In one bowl mix eggs and oil together. In another bowl mix diced onion, grated zucchini, diced bacon, grated cheese and self rasing flour. Combine dry and wet ingredients and stir until well combined. Pour in greased quiche dish and bake for 45 minutes in bre-heated oven at 200 degrees Celsius.

This sounds delicious! I'm going to save the recipe for next summer, when my garden has too much zucchini and I have no clue what to do with it. :-)
